Brooke's Mexican Eclair Cake

This is, by far, one of my very favorite desserts I have had...I can't seem to get enough.   I seem to keep coming up with a reason to make it...which is very bad for me :) Thank you to Darlene..who is fantastic!! Enjoy!!!

  • 1 cup water
  • 1 cube butter
  • 1 cup flour
  • 4 eggs
  • 2 small packages of instant vanilla pudding
  • 3 cups milk
  • 1 8 oz. package cream cheese
  • 1 container of cool whip-12 oz.
*Preheat oven to 400 degrees.
*Boil water and cube of butter until completely melted then take off heat and add flour with a wisk.  Add one egg at a time.  Pour mixture into a sprayed 9x13 pan and bake at 400 degrees for 25 minutes.
*Let cool in refrigerator before adding the filling.

Filling:
*Mix pudding, milk, and cream cheese until well blended.  Pour into eclair and top with cool whip.  Add chocolate syrup, powder or candy bar crumbles for extra yum!!!

***For best serving results, let cool in fridge for 1 hour before dishing.***

Yummy Cheese Ball

  • 1 Package cream cheese
  • 3 green onions finely chopped
  • 1/2 tsp. Bon Apetite Seasoning
  • 1/8 tsp. dry mustard
  • Slivered Almonds
*Mix all ingredients with a hand mixer/mixer until well blended.  Place mixture on a sheet of wax paper that is lined with a layer of almonds.  Form a ball while wrapping almonds around entire mixture.  Once covered, place covered cheese ball into fridge to set-up for approximately 1-2 hours.  This is a yummy, yummy snack.  It's gone before you know it :)
